What is the difference between cheese and cheese?

Cheese is one of the recognized health foods in the world. In recent years, with the continuous improvement of people's living standards, this kind of food, which is quite popular in the world, has now been favored by more and more citizens. But many people wonder why they are all called "cheese". The contents of the ingredients list are not the same. In fact, part of the reason is because there are different classifications of cheese. Currently there are cheeses and processed cheeses on the market.

What is remake cheese

The reprocessed cheese, also known as melted cheese, processed cheese or reconstituted cheese, is made of natural cheese with one or two different degrees of maturity as the main raw material, and is then chopped and added with an emulsifier and a stabilizer to be melted. In the processing process, proteins and fats can be added according to nutritional and texture requirements, and spices, seasonings, and vegetables, fruits, and meat products can be cooled and packaged according to taste needs. Because of its soft flavor and smooth texture, it is more popular with consumers. A box of squares sold in supermarkets is usually used to make burgers and sandwiches. Manufacturers usually write big cheeses and write small cheeses on the corners.

The reconstituted cheese contains only about 60% of the cheese, the remaining 40% is mainly water, and the addition of emulsifiers and salt (to help the fusion of water and cheese). Mixing these things quickly turns into something that is sticky and malleable, and then it is mechanically pressed and cut. It's a pretty little box sold in the supermarket.

When the cheese is continuously heated, protein and fat are separated, and the fat melts into a liquid overflow. In the case of reconstituted cheese, this separation is minimized due to the presence of emulsifiers. Therefore, functionally speaking, reconstituted cheese is more suitable for use in burgers and sandwiches.

From a commercial point of view, reconstituted cheese is only 60% cheese, and omitting the fermentation process and raw materials that make many cheeses unique in flavor, so the cost is lower. And its manufacturing process makes it easier to store. These two points are suitable for mass sales in supermarkets.

What is the difference between cheese and cheese?

Professor Nan Qingxian, a professor at the Food College of China Agricultural University and the chief expert of the Science and Technology Committee of the China Dairy Industry Association, first affirmed that reprocessed cheese and cheese are good nutritional dairy products, but the varieties are not the same. Cheese is divided into raw cheese and processed cheese. The original cheese is made directly from milk, and the cheese is reprocessed on the basis of the original cheese in order to satisfy the consumer's taste and other requirements. The processing process is to melt the original cheese through high temperature and then add some auxiliary materials to make the cheese of different tastes, shapes and textures. Due to the different processing techniques and the addition of excipients, it is difficult to say which of the two types of cheese is better, but in general it is a dairy product with high nutritional value.
