The researchers found that eating cured meats such as sausages and hams may aggravate asthma symptoms.
The study, called "French Epidemiology," uses 1,000 French subjects, of whom nearly half are asthmatics. A 10-year follow-up survey of them found that eating too much marinated meat significantly increased symptoms of asthma.
Asthma patients who consumed four or more servings of preserved meat per week were most severely affected. A cured meat is usually equivalent to 8 pieces of ham or 4 sausages. Researchers analyzed that nitrites in cured meat such as cured sausages and hams may exacerbate respiratory tract irritation and lead to increased asthma symptoms.
The results of the study were published in the latest issue of the British bimonthly "Chest."
